really easy (and really yummy) salmon

Weather in the South is conducive to grilling outdoors all year. today it’s just beautiful, with a remarkably crisp blue sky and no clouds as far as the eye can see. that tells me two things: find something to do out in the garden, and plan on grilling tonight. I’ll swing by the Whole Foods Market later this afternoon to get a nice salmon fillet.

For the marinade (let sit at least two hours, if you can):
2 Tbsp fresh lemon juice
2 Tbsp pure maple syrup
1 Tbsp cider vinegar
1 Tbsp olive oil
Salt to taste
Liberal dash of freshly ground black pepper
4 6-oz filets of salmon

Grill over medium heat until it suits you. I like my fish cooked well, but the mister likes his medium. We’ll probably have asparagus and couscous on the side. Mmm …

  1. I love the Fall too Becky! While I’m happy to see Spring after a blah Winter, the sky is so blue and the temperatures so comfortable in the Fall. Plus there is always the North Carolina State Fair to look forward to. Love visiting all the cakes up for ribbons each year 🙂
